Visfilet met champignons
• 1 stuk visfilet naar keuze • 1 gesnipperde sjalot • 4 champignons • 1 el witte
wijn • 1 el crème fraîche • zout • peper • klontje boter
De visfilet in blokjes snijden. De champignons wassen en in plakjes
snijden. De boter laten smelten in het pannetje. Het gesnipperde
sjalotje en de plakjes champignon hierin bakken. De blokjes vis
toevoegen en voorzichtig keren zodat ze aan alle zijden gebakken
worden. Vervolgens de witte wijn, zout en peper toevoegen. Na 1 à
2 min. de crème fraîche door het geheel scheppen en het gerecht is
klaar.
N.B. : U kunt verschillende soorten vis gebruiken. In plaats van
champignons kunt u ook andere paddestoelen gebruiken, bijv.
oesterzwammen.
St. Jacobsschelpen
• 2 St. Jacobsschelpen (zonder schelp) • sap van 1 citroen • 1 el witte wijn* •
1 el crème fraîche* • zout • peper • klontje boter
Laat de St. Jacobsschelpen een half uur marineren in het
citroensap. Laat de boter smelten in het pannetje en bak hierin de
schelpen gaar. Keer de schelpen van tijd tot tijd met het spateltje.
Op smaak brengen met peper en zout.
* U kunt zodra de schelpen gaar zijn eventueel een eetlepel witte
wijn en een eetlepel crème fraîche toevoegen en voorzichtig door
het gerecht roeren.
