6. Fill a large saucepan with water, bring to
the boil.
7. Place pasta in boiling water. Cook for 3-4
minutes or until just tender, drain and set
aside.
8. Toss pasta through pork mixture with basil
and oregano. Season to taste with salt and
pepper. Garnish with parmesan cheese.
Tagliatelle with Spinach, Mascarpone and
Parmesan
Serves: 3-4
1 quantity spinach tagliatelle
1 tablespoon olive oil
30g butter
2 cloves garlic, crushed
1 onion, finely chopped
½ teaspoon grated nutmeg
150g baby spinach leaves
½ cup thickened cream
150g mascarpone cheese
1 cup grated parmesan cheese
1 teaspoon lemon zest
Salt and freshly ground black pepper, to taste
1. Heat oil and butter in a medium saucepan
over medium heat. Add onion and garlic
cook for 3-4 minutes or until tender. Add
nutmeg and spinach. Stir until spinach has
wilted and halved in size.
2. Add cream, mascarpone, parmesan and
lemon zest to the pan. Bring to a simmer.
Set aside.
