SUPPEN

THAILÄNDISCHE SÜSSKARTOFFEL-SUPPE

Für 4 Portionen

• Zutaten

2 Esslöffel Öl

1 grosse Zwiebel, geschnitten

2 Knoblauchzehen, geschnitten

1 – 2 Esslöffel rote Curry-Paste

1 kg geschälte und geschnittene Süsskartoffeln

1 Liter Hühnerbrühe

270 ml Kokosnussmilch

Salz und frisch gemahlener, schwarzer Pfeffer, nach Belieben

Frischer, gehackter Koriander zum Verzieren

• Zubereitung

1. Öl in grosser Pfanne erhitzen, Zwiebel, Knoblauch und Curry-Paste zufügen und

unter Rühren für 4 bis 5 Minuten kochen lassen, bis die Zwiebel weich ist und

die Curry-Paste duftet.

2. Süsskartoffeln und Hühnerbrühe zugeben und zum Kochen bringen. Hitze re-

duzieren und Suppe 25 Minuten zugedeckt köcheln lassen, bis die Süsskartof-

feln weich sind. Vom Herd nehmen und Suppe auf Zimmertemperatur abküh-

len lassen.

3. Giessen Sie einen Teil der Suppe in den Mixkrug und drücken Sie den Deckel mit

Messbecher fest darauf. Mixen Sie die Suppe bei BLEND / 3 bis sie püriert ist. Pü-

rierte Suppe in einen Behälter giessen und mit der restlichen Suppe genauso ver-

fahren.

4. Pürierte Suppe wieder zurück in die Pfanne giessen und Kokosnussmilch zufü-

gen. Nach Geschmack würzen und wieder unter Rühren erwärmen.

5. Suppe vor dem Servieren mit Koriander garnieren.

• Tipp

Wenn die Suppe beim Kochen oder Mixen zu dick werden sollte, etwas Wasser

oder Brühe hinzufügen.
