8. Propuestas de recetas
8.1 Gofres de suero de leche
Ingredientes para aprox. 8
unidades:
•3 huevos
90 g de mantequilla ablandada
180 g de azúcar
250 ml de suero de leche
200 g de harina de trigo
• 1 cucharada pequeña de levadura
química
El zumo y la corteza rallada de 2 limas
125 g de nata
Elaboracn:
1. Separar las yemas de las claras.
2. Batir la clara y ponerla en un lugar
fresco.
3. Remover 75 g de mantequilla y 100 g
de azúcar hasta que la masa adquiera
una consistencia cremosa.
4. Incorporar removiendo poco a poco la
yema de huevo y el suero de leche.
5. Mezclar y añadir poco a poco la harina
y la levadura química.
6. Incorporar la clara a punto de nieve y
dejar que se hinche durante aprox. 30
minutos
7. Mientras tanto, fundir el azúcar restante,
el zumo de lima y el resto de la
mantequilla y dejarlos caramelizar
ligeramente.
8. Rebajar con nata, dejar hervir durante 3
minutos.
9. Añadir la corteza de lima y mantener el
conjunto caliente.
10.Cocinar los gofres (ver "6. Preparación
de los gofres" en la página 8).
11. Servir con la salsa.
8.2 Gofres estándar
Ingredientes:
•6 huevos
1 bolsa de azúcar avainillado
1/2 bolsa de levadura química
250 g de azúcar
200 g de mantequilla o margarina
500 g de harina
300 ml de leche
125 ml de agua mineral con gas
Elaboración:
1. Separar las yemas de las claras.
2. Batir la clara y ponerla en un lugar
fresco.
3. Remover la mantequilla y el azúcar
hasta que la masa adquiera una
consistencia cremosa.
4. Incorporar removiendo poco a poco la
yema de huevo, el leche y el agua
mineral.
5. Mezclar y añadir poco a poco la harina
y la levadura química.
6. Incorporar removiendo el azúcar
avainillado.
7. Incorporar la clara a punto de nieve y
dejar que se hinche durante aprox. 30
minutos
8. Cocinar los gofres (ver "6. Preparación
de los gofres" en la página 8).
