8. Ideeën voor recepten
8.1 Karnemelkwafels
Ingrediënten voor ca. 8 stuks:
3 eieren
90 g zachte boter
180 g suiker
250 ml karnemelk
200 g tarwemeel
1 theelepels bakpoeder
sap en geraspte schil van 2 limoenen
125 g slagroom
Bereiding:
1. Eieren scheiden.
2. Eiwit stijf kloppen en koud wegzetten.
3. 75 g boter en 100 g suiker romig
roeren.
4. Eigeel en karnemelk beetje voor beetje
toevoegen en omroeren.
5. Meel en bakpoeder mengen en
langzaam toevoegen.
6. Eisneeuw eronder scheppen en het deeg
ca. 30 minuten laten rijzen.
7. Ondertussen de overige suiker,
limoensap en boter smelten en licht laten
karamelliseren.
8. Met room blussen, ca. 3 minuten laten
koken.
9. Limoenschaal toevoegen en warm
houden.
10.Wafels bakken (zie „6. Wafels bakken“
op pagina 18).
11. Met de saus serveren.
8.2 Standaardwafels
Ingrediënten:
6 eieren
1 zakje vanillesuiker
1/2 zakje bakpoeder
250 g suiker
200 g boter of margarine
500 g bloem
300 ml melk
125 ml mineraalwater met koolzuur
Bereiding:
1. Eieren scheiden.
2. Eiwit stijf kloppen en koud wegzetten.
3. Boter en suiker romig roeren.
4. Eigeel, melk en mineraalwater beetje
voor beetje toevoegen en omroeren.
5. Meel en bakpoeder mengen en
langzaam toevoegen.
6. Vanillesuiker erdoor roeren.
7. Eisneeuw eronder scheppen en het deeg
ca. 30 minuten laten rijzen.
8. Wafels bakken (zie „6. Wafels bakken“
op pagina 18).
