9.5 Guisado de ervilhas
Para 4 pessoas
Ingredientes:
1,8 litros de caldo de legumes (quente)
500 gramas de ervilhas cortadas ao meio (ervilhas com casca devem ser demolhadas 12 horas
antes!)
20 gramas de banha
150 gramas de barriga de porco
2 cebolas, bem picadas
100 gramas de aipo, aos cubos pequenos
1 alho francês, aos cubos pequenos
2 cebolas, aos cubos pequenos
300 gramas de batatas vermelhas, aos cubos pequenos
1/2 raminho de salsa fresca, bem picada
1 colher de chá de manjerona seca
1-2 colheres de chá de sal
Pimenta preta moída na altura
4 salsichas tipo vienense, cortadas às fatias
Método:
Lave e corte aos cubos pequenos o aipo, as cenouras e o alho francês. Descasque as batatas e corte-as
aos cubos em pedaços do mesmo tamanho. Descasque e pique bem as cebolas.
Corte a barriga de porco em pedaços pequenos.
Numa frigideira, aqueça a banha e adicione a barriga de porco, cozinhando até ficar castanha
dourada. De seguida, adicione as cebolas, o aipo, o alho francês e as cebolas. Frite os vegetais
rapidamente.
Coloque a panela de cozedura lenta em LOW [baixo] e adicione-lhe os vegetais fritos, as cebolas e a
barriga de porco. Adicione as batatas aos cubos e as ervilhas, e cubra com o caldo quente.
Adicione a manjerona seca. Mexa bem e feche a tampa de vidro (2).
