Frische Kräuter verlieren durch die lange Garzeit ihr Aroma, daher gibt man die frische
Petersilie erst zum Schluss hinzu.
Den Glasdeckel (2) schließen und die Minestrone 6 Stunden lang auf der Heizstufe „LOW“ garen lassen.
Wenn die Minestrone fertig ist, in einem separaten Topf gesalzenes Wasser zum Kochen bringen und die
Nudeln nach Packungsanweisung kochen.
Die Petersilie waschen und fein hacken.
Die gekochten Nudeln und die Petersilie in die fertige Minestrone geben und etwas frisch geriebenen
Parmesan darüber geben.
9.2 Bolognese-Sauce
Für 4 Personen
Zutaten:
1 Zwiebel
1 Knoblauchzehe
1 Möhre
100 Gramm geräucherter Speck in Würfeln
1-2 Stangen Staudensellerie
500 Gramm Hackfleisch gemischt
2 Esslöffel Butter
1/8 Liter Rotwein
200 ml Brühe
400 Gramm (1 kleine Dose) geschälte/stückige Tomaten
500 Gramm passierte Tomaten
Salz, Pfeffer, Zucker, Oregano
Dazu empfehlen wir:
500 Gramm gekochte Spaghetti
frisch geriebener Parmesan
Zubereitung:
Zwiebel und Knoblauch schälen, Möhre und Sellerie putzen. Alles fein hacken.
In einer Pfanne die Butter langsam erhitzen. Zuerst die Speckwürfel anbraten, danach Zwiebeln,
Knoblauch, Sellerie und die Möhren erhitzen. Jetzt das Hackfleisch hinzugeben und die Fleisch-/Gemüse-
Mischung gut vermengen und anbraten.
Den Rotwein unter ständigem Rühren hinzugeben bis dieser fast verdampft ist.
