Wortelsoep
Ingrediënten:
500 g wortelen
250 ml water
500 ml vleesbouillon (pot)
125 ml room
125 ml witte wijn
Zout
peper
50 g koude boter
Verse kervel
Fornuis:
Verwarming: kookplaat
Garingstijd: wortelen ca. 20 minuten
Magnetronoven:
Vermogen: 600 Watt
Garingstijd: wortelen ca. 10 minuten
Bereiding:
De wortelen wassen en snijden.
Snijd ze zo klein, dat ze goed in de mixer passen.
Doe 250 ml water in een pan en kook de worte-
len daarin ongeveer 20 minuten lang.
Vervolgens pureert u het geheel in de mixer,
totdat er geen grotere stukken meer over zijn.
Doe de gepureerde wortelen daarna terug in de
pan.
Giet nu vleesbouillon, slagroom en witte wijn
erbij.
Verhit de soep en breng deze op smaak.
Roer de boter in kleine stukjes in de soep en
serveer daarna met de kervel.
Soufflé met garnalen
Ingrediënten:
40 g boter
20 g meel
250 ml melk
1 snufje suiker
150 g Goudse kaas
200 g gepelde garnalen
4 eigelen
4 eiwitten
Boter voor de vorm
Fornuis:
Inschuifhoogte: 2
Verwarming: E: boven- en onderhitte 200°C
(voorverwarmd)
G: stand 3
Baktijd: 25-30 minuten
Magnetronoven:
Vermogen: 360 Watt
Baktijd: 10-15 minuten
Bereiding:
Verhit de boter en het meel en doe er vervolgens
al roerende melk en suiker bij.
Laat het geheel één keer opkoken.
Hak de kaas fijn in de doorloopsnijder met de
raspelschijf en roer deze in de saus.
Spatel de gepelde garnalen erdoor.
Roer het eigeel door elkaar en spatel het erdoor.
Klop het eiwit stijf en spatel het erdoor.
Vet nu een vuurvaste schaal in of kleine portie-
schaaltjes en vul deze met de massa.
Bak de soufflés meteen en serveer ze direct.
