Aardappelsoep met groente
Ingrediënten:
125 g wortelen
50 g selderij
250 g aardappelen
1000 ml instant-vleesbouillon
1 ui
20 g boter
1 beker crème fraîche of slagroom
1/2 EL pittige mosterd
Zout
Peper
1 steel prei
1 EL gehakte kruiden (naar seizoen)
Fornuis:
Verwarming: kookplaat
Garingstijd: 10 minuten
Magnetronoven:
Vermogen: 600 Watt
Garingstijd: 5-7 minuten
Bereiding:
De wortelen, selderij en aardappelen wassen,
schillen en in blokjes snijden.
De steel prei vervolgens panklaar maken en in
de doorloopsnijder met de raspschijf in fijne
reepjes snijden.
Giet 1/3 van de bouillon in de mixer en start de
mixer met gesloten deksel op hoogste stand.
Doe de fijngehakte groente door de opening in
het deksel in de mixer. Pureer het zo lang, totdat
de gewenste consistentie is bereikt.
Giet de overgebleven vleesbouillon in een grote
pan en doe vervolgens de fijn gepureerde
groente erbij.
Laat het geheel nu 10 minuten afgedekt opkoken.
(Alternatief kunt u de groentebouillon ook op
600 Watt 5-7 minuten gesloten laten garen in
de magnetron.)
Bak ondertussen de uien in boter totdat zij goud-
bruin zijn en doe ze vervolgens in de soep.
Breng nu met crème fraîche, mosterd, zout en
peper op uw persoonlijke smaak.
Roer voor het serveren de gehakte kruiden er
doorheen. Doe de soep nu in voorverwarmde
borden en bestrooi met de reepjes prei.
