Programma 10: Deeg
Zemelenbrood
200ml water 50g boter of margarine
1 ei ¾ tl keukenzout
3 el suiker 500 g tarwemeel (DE-type 1050)
50 g tarwezemelen 1 pakje gedroogde gist (7 g)
Frans stokbrood
300 ml water 1 el honing
1 tl zout 1 tl suiker
540g tarwemeel (DE-type 550) 1 pakje gedroogde gist (7 g)
Vorm broden uit het gemaakte deeg en snij de bovenkant van de gevormde broden (baguettes)
schuin in. Laat het deeg vervolgens ca. 30 tot 40 minuten op de bakplaat rijzen en bak het brood
dan ca. 25 minuten in de bakoven op 175°C.
Krakelingen
200ml water ¼ tl keukenzout
½ tl suiker 360g tarwemeel (DE-type 405)
½ pakje gedroogde gist (3,5 g)
Neem het volgende in acht: Vorm het deeg als het klaar is tot krakelingen. Bestrijk de krakelingen
met losgeklopt ei en bestrooi ze vervolgens met grof zout (2 el grof zout voor 12 krakelingen).
Plaats de krakelingen op een bakplaat en bak ze 15 tot 20 minuten in de oven op 230°C.

Eierpastadeeg
5 eieren (kamertemperatuur)
250 g Zeeuwse tarwebloem (DE-type 405)
250 g gebuild tarwemeel (DE-type 1050)
Pastadeeg
300 ml water
250 g Zeeuwse tarwebloem (DE-type 405)
250 g gebuild tarwemeel (DE-type 1050)
Programma 12: Pizzadeeg
Neem het volgende in acht: Laat het deeg na het uitrollen op de bakplaat nog ca. 15 minuten
rijzen. Vervolgens belegt u het deeg naar wens en bakt u het in ca. 15 tot 20 minuten op 180° tot
200°C in de oven.
