Recepty
Kebbe
Prísady pre mäsovú plnku
400 g chudého hovädzieho mäsa alebo jahňacieho mäsa
2 cibule
10 g múky
25 g hrubo nasekaných píniových jadier
Vždy 1/2 ČL mletého nového korenia, škorice, rímskej rasce (kmín), mletej rasce,
mletých klinčekov, mletého muškátového orieška
Soľ ačierne korenie
Prísady pre obal
500 g bulgur pšenice (namočenej)
500 g chudého hovädzieho mäsa alebo jahňacieho mäsa
1 cibuľa
1 štipka čierneho korenia, 1 štipka čili
Mäsová plnka
Najprv pripravte mäsovú plnku, aby táto mohla počas prípravy obalu vychladnúť.
Mäso pomeľte dvakrát s mlynčekom na mäso (najprv so stredným a potom
s jemným dierovaným kotúčom 0). Mäso, múku, píniové jadrá a koreniny dobre
premiešajte. Posekajte a opečte cibuľu. Pridajte mäsovú hmotu a premiešajte
s cibuľou. Všetko dobre prepečte a nechajte potom vychladnúť.
Obal
Mäso pre obal pomeľte dvakrát s mlynčekom na mäso (najprv so stredným a
potom s jemným dierovaným kotúčom 0) a zmiešajte s bulgur pšenicou, cibuľou
nakrájanou na malé kúsky a s koreninami. Túto hmotu taktiež dvakrát pomeľte
mlynčekom na mäso. Dierovaný kotúč 0 vymeňte za nadstavec na kebbe r
(pozri kapitolu „Montáž nadstavca na kebbe“) a vytvarujte cca 7 cm dlhé obaly
na kebbe.
Príprava
Jednotlivé obaly na kebbe naplňte priamo po vyhotovení mäsovou plnkou
a vždy zatlačte spolu konce, aby vznikli malé tašky. Hotové kebbe fritujte
v 190 °C horúcom oleji cca 3 minúty. Kebbe by sa mali fritovať do zlato-hneda.
