Cerstvá klobása
Suroviny:
300 g libového hovězího
500 g libového vepřového
200 g slaniny z plecka
20 g soli
1/2 lžíce bílého mletého pepře
1 lžička kmínu
1/2 lžičky muškátového oříšku
Hovězí, vepřové maso a slaninu dvakrát pomeleme v mlýnku.
Přidáme smíchané koření a sůl a 5 minut hněteme.
Náplň dejte na ca 30 minut do chladničky. Klobásy naplňte dle návodu
(viz kapitola „Zpracování uzenin“) a vytvořte klobásky o délce 25 cm.
Hotovou klobásku snězte dobře osmaženou ještě týž den.
Stříkané pečivo
Suroviny:
500 g másla
500 g cukru
2 3 balíčky vanilkového cukru
1 balíček vanilkového pudinku
1/4 čajové lžičky soli
1 vejce
4 žloutky
800 g mouky (typ 405)
2 čajové lžičky prášku do pečiva
200 g mletých mandlí (blanšírované)
nastrouhaná kůra z jednoho citronu
Máslo utřete do pěny. Poté postupně přidejte zbývající suroviny a těsto dobře
prohněťte. Hotové těsto nechte odpočívat zakryté cca 12 hodin (např. přes noc)
v ledničce. Pak těsto umelte v mlýnku s nástavcem na stříkané pečivo se vzorko-
vacím proužkem 1. Stříkané pečivo položte na pečicí plech vyložený pečicím
papírem. Pečivo pečte v předehřáté troubě na 180 °C cca 10 –15 minut do
zlatožluta.
