Pollame
Le indicazioni di peso nella tabella si riferiscono a pollame
senza ripieno, pronto da arrostire.
Inizialmente, disporre il pollame intero sulla griglia con il lato
del petto rivolto verso il basso che deve essere girato trascorsi

Girare i pezzi di arrosto come la rolata o il petto di tacchino a
metà cottura. Girare i pezzi di pollo trascorsi i

indicato.
Per l'anatra e l'oca, punzecchiare la pelle sotto le ali. Si
consente così al grasso di colare.
Il pollame risulterà particolarmente dorato e croccante se verso
la fine della cottura lo si spennella con burro, acqua salata o
succo d'arancia.
