Níveis de temperatura
Tabela
A tabela indica o nível de temperatura apropriado para
cada alimento. O tempo de fritura pode variar em
função do tipo, peso, tamanho e qualidade dos
alimentos.
O nível de temperatura regulado varia em função da
frigideira utilizada.
Pré-aqueça a frigideira vazia e adicione óleo e os
alimentos após o sinal sonoro.
Nível de temperatura Adequado para
1 muito baixa Preparar e cozer molhos em lume brando, refogar legumes e assar alimentos com azeite virgem extra, manteiga ou
margarina.
2 baixa Preparar alimentos com azeite virgem extra, manteiga ou margarina, p. ex., omeletas.
3 média - baixa Assar peixe e alimentos grandes, p. ex., almôndegas e salsichas.
4 média - elevada Assar bifes, no ponto ou bem passados, alimentos ultracongelados, panados e finos, p. ex., escalopes, ensopados e
legumes.
5 elevada Assar alimentos a altas temperaturas, p. ex., bifes, mal passados, bolinhos de batata e batatas fritas.
