Tessiner Risotto
Temps de cuisson total: env. 20-25 minutes
Vaisselle: 1 terrine à couvercle (2 litres)

50 g de lard maigre
2 CS de beurre ou de margarine (20 g)
1 oignon (50 g), haché menu
200 g de riz rond
400 ml de bouillon de viande
70 g de Sbrinz râpé (ou d’emmenthal râpé)
1 pincée de safran
sel & poivre

1. Couper le lard en dés. Beurrer le fond de la terrine,
ajouter l’oignon et le lard, couvrir et cuire à l’étuvée.
2-3 mn 900 W
2. Ajouter le riz, verser le bouillon de viande, porter à
ébullition puis faire cuire lentement.

Après la cuisson, laisser le riz reposer environ 2
minutes.
3. Mélanger le fromage et le safran puis assaisonner.

2 CS de beurre ou de margarine (20 g)
150 ml de crème fraîche)
sel, poivre, muscade, paprika en poudre,
quelques gouttes de jus de citron
1 bouquet d’aneth haché menu

1. Mettre le chou-rave et l’eau dans la terrine, couvrir
et cuire. Remuer de temps en temps.

Verser l’eau de cuisson.
2. Répartir le beurre dans la terrine, ajouter la crème
fraîche et réchauffer sans couvercle. Ne pas porter à
ébullition.

3. Saler la sauce et l’assaisonner avec les épices et le jus
de citron. Incorporer l’aneth et verser la sauce sur le
chou-rave.
