TIPS EN ADVIES
BEDEKKEN
Door een gerecht te bedekken
blijft het vocht in het voedsel,
waardoor de kooktijd wordt
verkort. Voor het bedekken een
deksel, magnetronfolie of een
afdekkap gebruiken. Gerechten die een korstje
dienen te krijgen, bijv. braadvlees of kip, niet
bedekken. Hierbij geldt de regel dat alles wat op
het conventionele fornuis wordt bedekt ook in de
magnetron dient te worden bedekt. Wat op het
fornuis open wordt gekookd, kan ook in de
magnetron open worden gekookd.
VOEDSEL VAN ONREGELMATIGE
GROOTTE
met de dikkere of stevige kant
naar buiten plaatsen. Groenten
(bijv. broccoli) met de steel naar
buiten leggen. Dikkere porties
hebben een langere kooktijd
nodig en krijgen aan de buitenkant meer
microgolf-energie, zodat het voedsel gelijkmatig
gaar wordt.
ROEREN
Het roeren van de gerechten is
noodzakelijk, omdat de
microgolven eerst de buitenste
gedeelten verwarmen. Hierdoor
wordt de temperatuurwaarde
overal gelijk en het voedsel wordt gelijkmatig
verwarmd.
RANGSCHIKKING
Meerdere afzonderlijke porties, bijv.
puddingvormpjes, kopjes of ongeschilde
aardappelen, ringvormig op de draaitafel
plaatsen. Tussen de porties ruimte open laten,
zodat de microgolf-energie van alle kanten kan
binnendringen.
OMDRAAIEN
Middelgrote porties zoals hamburgers en steaks,
tijdens het koken één keer draaien, om de kooktijd
te verkorten. Grote porties zoals braadvlees en
kip, moeten worden omgedraaid, omdat de naar
boven toe gekeerde zijde meer microgolf-energie
krijgt en zou kunnen uitdrogen indien deze niet
wordt omgedraaid.
STANDTIJD
Het aanhouden van de standtijd
is een van de belangrijkste
microgolf-regels. Bijna alle
gerechten die in de magnetron
worden ontdooid, verwarmd of
gekookd, hebben een korte of langere standtijd
nodig waarin een temperatuurgelijkmatigheid
plaatsvindt en de vloeistof zich overal gelijk in het
voedsel bevindt.
