Ingredienti
1 uovo
4 CMlatte o panna (50 ml)
1 pizzico di sale
1 pizzico di noce moscata
1. Sbattere con un frullino tutti gli ingredienti, versare
nella tazza e lasciar rapprendere in forno.

2. Rovesciare la crema rappresa e lasciarla
raffreddare, poi tagliarla a dadini da aggiungere
a piacere ad consommé o minestre.

TONNO FRESCO CON VERDURE
Thon frais braisé aux tomates et aux poivrons
Tempo di cottura: circa 18-20 minuti
Utensile:stampo basso e ovale con
coperchio (circa 26 cm di lunghezza)
Ingredienti
500 g tonno fresco tagliato a fette
2 CM succo di limone
sale
1 CU olio vegetale per ungere lo stampo

peperone verde (125 g) tagliato a strisce
2 cipolle (125 g) tritate finemente
1 carota (50 g) tagliata a fette
1-2 pomodori (125 g) spezzettati
40 ml vino bianco
1 spicchio d’aglio
mazzetto aromatico
sale, pepe
1. Lavare il tonno ed asciugarlo con un canovaccio
o carta da cucina. Versarvi sopra il succo di
limone. Lasciar riposare per 15 minuti circa,
asciugare nuovamente e salare.
2. Ungere lo stampo e collocarvi il tonno,
disponendo sopra le verdure. Bagnare con il vino
bianco, aggiungere lo spicchio d’aglio e il
mazzetto aromatico, salare e pepare. Coprire lo
stampo ed iniziare la cottura.

3. A cottura terminata lasciar riposare per altri 2
minuti circa, togliere il mazzetto aromatico e lo
spicchio d’aglio e servire in tavola.
Consiglio:
Un mazzetto aromatico si compone di:
un rametto di prezzemolo, un mazzetto di
odori, un rametto di sedano di monte, un
rametto di timo e, alcune foglie di lauro.
