RECEPTI
VROČ ČOKOLADNI NARASTEK METLICA
75 g maslo 50 g gladka moka
20 g kakav v prahu 450 g mleko
4 jajca, ločena 50 g sladkor v prahu
Maslo raztopite v ponvi pri nizki temperaturi. Vmešajte moko in kakav. Dodajte mleko. Mešajte, dokler ne
zgosti. Odstavite z vročine. Hladite 30 minut. Vmešajte jajčne rumenjake. Jajčne beljake nekaj minut
stepajte z veliko hitrostjo. Dodajte sladkor in stepajte do trdnega snega. Sestavine zmešajte v namaščeno
ognjevarno posodo s prostornino 1,2 l. Posodo postavite v pekač za pečenje, ki je do polovice napolnjen z
vrelo vodo. Pecite jih v predhodno ogreti pečici 40-45 minut pri 190°C.
ZAVITKI METLICE
400 g gladka moka 1 jajce
300 ml mleko 2,5 g sol
rastlinsko olje
Jajce in mleko zmešajte v vrču. Moko presejte v skledo. Dodajte sol. Mešajte s srednjo hitrostjo Postopoma
dodajte tekočino. Postopoma povečajte hitrost, dokler ni vse dobro zmešano. Majhne količin zmesi
nakapljajte v vročo malo naoljeno ponev. Pecite do zlatorjave barve na obeh straneh (1 minuta). Postavite
na stran in hranite na toplem.
OSNOVNI PIŠKOTI METLICE
100 g maslo 150 g sladkor v prahu
5 ml vaniljev izvleček 1 jajce
100 g gladka moka 100 g samovzhajalna moka
Maslo, sladkor in vaniljev izvleček dajte v skledo. Pri srednji hitrosti zmešajte do puhastega videza (1–2
minuti). Zmanjšajte hitrost. Dodajte jajce. Postopoma povečajte hitrost, dokler ni vse dobro zmešano. Moki
presejte skupaj in ju vmešajte v zmes. Zmes oblikujte v kroglice Kroglice položite na pomaščen pekač.
Malo jih sploščite. Pecite jih v predhodno ogreti pečici 12–15 minut pri 180°C. Pustite, da se nekaj minut
hladijo na pladnju, potem pa jih premaknite na rešetko.
KLASIČNI VIKTORIJANSKI BISKVIT METLICE
100 g maslo/margarina 100 g sladkor v prahu
2 jajca 100 g samovzhajalna moka
1 kapljico vaniljev izvleček
Namažite dva ravna pekača dolžine 180 mm. Dno obložite s pomaščenim papirjem, neprepustnim za
maščobo. V skledo dajte maslo in sladkor. Pri srednji hitrosti zmešajte do puhastega videza (12 minuti).
Zmanjšajte hitrost. Postopoma dodajte jajca, vaniljo in nato moko. Ko se začnejo sestavine združevati,
povečajte na srednjo hitrost. Zmes dajte v pekača. Pecite jih v predhodno ogreti pečici 25 minut pri 180°C.
Površina mora biti zlatorjava. Ohladite na rešetki. En biskvit obrnite narobe. Na vrh dajte sloj malinove
marmelade. Drugi biskvit postavite na vrh marmelade. Malinovo marmelado lahko zamenjate z drugimi
nadevi, na primer masleno kremo.
MASLENA KREMA
50 g maslo/margarina
100 g sladkor v prahu
kar koli od naslednjega:
2 kapljici tekoča aroma
5 g kakav v prahu
naribana limonina/pomarančna lupinica
Arome dodajajte postopoma in preverjajte okus. V skledo dajte maslo in sladkor. Pri srednji hitrosti
zmešajte do puhastega videza (12 minuti).
