ZAČINJENA BUČNA JUHA
900 g buča
2 T rastlinsko olje
2 por 2 c česen
900 m piščančja/zelenjavna osnova
1 t mleti ingver
2 T kisla smetana
1 t mleti koriander
1 b listi koriandra
sol in poper
Bučo olupite, odstranite semena in jo razrežite na koščke. Segrejte olje v ponvi. Dodajte por, česen in
začimbe. Mešajte 3 minute. Dodajte osnovo in bučo. Segrejte do vrenja, med tem mešajte. Zmanjšajte
temperaturo. Ponev pokrijte. Dušite 20–30 minut. Odstavite z vročine. Vmešajte koriander in smetano.
Hladite 30 minut. Obdelajte do gladke mase. Segrejte na temperaturo za strežbo (ne pustite, da zavre).
Začinite po okusu. Postrezite s kruhom.
KORIANDROV PESTO
2 h listi koriandra
2 c česen
60 g pinjole
125 m oljčno olje
60 g parmezan, nariban
Koriander, česen, pinjole in polovico olja obdelajte do gladke mase. Prelijte v veliko skledo. Vmešajte
parmezan. Dodajte olje, da uravnate gostoto: Za pomakanje: gosto. Za preliv: srednje. Za omako za
testenine: redko.
