STÆRK GRÆSKAR SUPPE
900 g græskar
2 T vegetabilsk olie
2 porrer
2 c hvidløg
900 m kyllinge-/grøntsagsbouillon
1 t kværnet ingefær
2 T kaffefløde/crème fraiche
1 t kværnet koriander
1 b korianderblade
salt og peber
Skræl, udkern og skær græskaret i stykker. Varm olien i gryden. Tilsæt porrer, hvidløg og krydderier. Rør i 3
minutter. Tilsæt bouillon og græskar. Bring i kog, rør rundt. Skru ned for varmen. Læg låg på gryden. Lad
suppen simre i 20-30 minutter. Fjern fra varmen.
Rør koriander og fløde i. Afkøl i 30 minutter. Bearbejd til jævnt. Bring til serveringstemperatur (lad ikke
koge) Smag til. Servér med brød.
KORIANDER PESTO
2 c hvidløg
2 h korianderblade
60 g pinjekerner
60 g Parmesan, revet
125 m olivenolie
Bearbejd koriander, hvidløg, pinjekerner og halvdelen af olien til det er jævnt. Hæld det over i en stor skål.
Rør parmesanen i. Tilsæt olien for at tilpasse konsistensen: Til dip: tyk. Til fyld: mellem. Til pastasauce: tynd.
