ZUPPA DI ZUCCA SPEZIATA
2 T olio vegetale 900 m brodo di
pollo/vegetale 900 g zucca
1 t zenzero 1 b foglie di
coriandolo 2 porri
1 t coriandolo 2 T panna
fresca/semi-grassa 2 c d’aglio
sale e pepe
Togliere la buccia, i semi e tagliare la zucca in grossi pezzi. Scaldare lolio in una pentola. Aggiungere i porri,
l’aglio e le spezie. Mescolare per 3 minuti. Aggiungere il dado e la zucca. Portare a ebollizione. Abbassare
la fiamma. Coprire la pentola. Cuocere a fuoco lento per 20-30 minuti. Togliere dal fuoco. Aggiungere
mescolando coriandolo e panna. Raffreddare per 30 minuti. Lavorare fino a raggiungere una consistenza
omogenea. Portare a temperatura adatta a servire (non lasciare bollire). Regolare il condimento. Servire
con del pane.
PESTO AL CORIANDOLO
2 h foglie di coriandolo 2 c d’aglio
60 g di pinoli
125 m d’olio di oliva 60 g parmigiano
grattugiato
Tritare coriandolo, aglio, pinoli e metà dell’olio fino a dare al composto un aspetto uniforme. Mettere il
contenuto in una bacinella. Mescolarvi il parmigiano. Aggiungere olio per regolarne la consistenza: Per
intingere: denso. Per una salsa: media. Per una salsa per condire la pasta: fluida.

Lavorare il tutto fino a dare un aspetto uniforme.
