PESTO DE CORIANDRU
2 h frunze de coriandru 2 c usturoi
60g semințe de pin 125ml ulei de măsline
60g Parmezan, ras
Procesați coriandrul, usturoiul, semințele de pin şi jumătate din cantitatea de ulei
până când se înmoaie. Transferați amestecul într-un castron mare. Adăugați
parmezanul şi amestecați. Adăugați ulei pentru a ajusta consistența. Pentru sos:
consistent. Pentru garnitură: mediu. Pentru sos de paste: subțire.
SOS DULCEACRIŞOR
2 salote 1 o bucată mică de ghimbir, decojit
1 c usturoi 15ml sos de soia
10ml oțet din vin alb 5ml muştar
5ml piure de roşii
Procesați toate ingredientele până devin moi. A se servi cu pui, peşte sau pe post
de sos.
SOS CU ULEI DE MĂSLINE ŞI ANŞOA
125g măsline negre fără sâmburi 30g fileuri de anşoa, bine scurse
25g capere, uscate 75ml ulei de măsline
15ml brandy (opțional) piper negru
Puneți deoparte jumătate din cantitatea de ulei. Procesați restul ingredientelor.
Adăugați ulei pentru a ajusta consistența. Pentru tepenada: consistent. Pentru sos
de paste: subțire. Condimentați cu piper negru.
SALSA DENSĂ DE ROŞII
¼ ardei iute roşu (fără sâmburi) ½ ceapă
½ ardei roşu 400g roşii (conservă)
½ ardei verde 1 c usturoi
60ml piure de roşii 1 h pătrunjel
8ml ulei de măsline 2.5g sare
Montați lama. Tocați ceapa, ardeiul roşu, ardeiul verde, usturoiul, ardeiul iute şi
pătrunjelul. Adăugați roşiile, uleiul de măsline, piureul de roşii şi sarea. Procesați
timp de 5 minute.
