KORIANDER PESZTÓ

2 h koriander levelek 2 c fokhagyma

60g fenyőmagok 125ml olívaolaj

60g reszelt parmezán

Mixelje össze a koriandert, a fokhagymát, fenyőmagvakat és az olaj felét, míg sima

nem lesz. Tegye át egy nagy tálba. Keverje bele a parmezánt. Adjon hozzá olajat,

hogy a megfelelő állagú legyen: Mártáshoz: sűrű. Bevonathoz: közepes. Tészta

szószhoz: híg.

ÉDESSAVANYÚ SZÓSZ

2 mogyoróhagymák 1 egy kicsi, hámozott gyömbér

1 c fokhagyma 15ml szója szósz

10ml fehérborecet 5ml mustár

5ml paradicsom püré

Mixeljen össze mindent, míg sima nem lesz. Csirkével, hallal, vagy mártásként

tálalja.

FEKETE OLAJBOGYÓ ÉS AJÓKA SZÓSZ

125g kimagozott fekete olajbogyók 30g leszűrt ajóka ﬁlék

25g lecsepegtetett kapribogyók 75ml olívaolaj

15ml konyak (fakultatív) feketebors

Tegye félre az olaj felét. Mixelje össze az összes többi hozzávalót. Adjon hozzá olajat,

hogy a megfelelő állagú legyen: Olajbogyókrémhez: sűrű. Tészta szószhoz: híg.

Ízesítse feketeborssal.

SŰRŰ PARADICSOM MÁRTÁS

¼ piros chilli (magoktól megtisztított) ½ hagyma

½ piros paprika 400g paradicsom (konzerv)

½ zöld paprika 1 c fokhagyma

60ml paradicsom püré 1 h petrezselyem

8ml olívaolaj 2.5g só

Tegye be a kést. Vágja fel a hagymát, a piros paprikát, a zöld paprikát, fokhagymát,

chillit és petrezselymet nagy darabokra. Adja hozzá a paradicsomokat, az olíva

olajat, a paradicsom pürét és a sót. Dolgozza össze 5 másodpercig.

TORMÁSALMÁS SZÓSZ

125ml sűrű tejföl 1 savanyú ízű, hámozott és reszelt alma

45g torma aroma 5g paprika

Mixelje addig a tejfölt, míg majdnem kemény lesz. Tegye át egy nagy tálba. Öntse

bele a többi hozzávalót. Ízesítse feketeborssal. Marha vagy kolbász mellé tálalja.
