KORIANDROVÉ PESTO
2 h koriandrové lístky 2 c cesnak
60g píniové oriešky 125ml olivový olej
60g parmezán, nastrúhaný
Pomixujte koriander, cesnak, píniové oriešky a polovicu oleja do hladkej hmoty.
Preložte do veľkej misy. Vmiešajte do hmoty parmezán. Pridajte olej a upravte
konzistenciu: Na namáčanie: hustá Na polevu: stredne hustá Na omáčku na
cestoviny: riedka
SLADKOKYSLÁ OMÁČKA
2 šalotky 1 malý kúsok zázvoru, očistený
1 c cesnak 15ml sójová omáčka
10ml biely vínny ocot 5ml horčica
5ml paradajkové pyré
Všetko zmixujte do hladka. Podávajte s kurčaťom, rybou, alebo ako omáčku na
namáčanie.
OMÁČKA Z ČIERNYCH OLÍV A SARDEL
125g vykôstkované čierne olivy 30g sardelové plátky, odkvapkané
25g kapary, odkvapkané 75m olivový olej
15ml koňak (nemusí byť) čierne korenie
Polovicu oleja si rezervujte. Všetko ostatné zmixujte. Pridajte olej a upravte
konzistenciu: Na tapenádu: hustá Na omáčku na cestoviny: riedka Ochuťte čiernym
korením.
PARADAJKOVÁ SALSA S KÚSKAMI ZELENINY
¼ čili papričky (bez semien) ½ červenej papriky
½ cibuľa 400g paradajok (v konzerve)
½ zelenej papriky 1 c cesnak
60ml paradajkové pyré 1 h petržlen
8ml olivový olej 2.5g soľ
Založte nôž. Nakrájajte cibuľu, červenú papriku, zelenú papriku, cesnak, čili a
petržlen na kúsky. Pridajte paradajky, olivový olej, paradajkové pyré a soľ. Miešajte 5
sekúnd.
CHRENOVOJABLKOVÁ OMÁČKA
1 jablko s ostrou chuťou, ošúpané a nastrúhané
125ml smotana na šľahanie 45g chrenová šťava
5g paprika
Mixujte krém, až kým sa netvoria mäkké kopčeky. Preložte do veľkej misy. Za
stáleho miešania zamiešajte zvyšok prísad. Ochuťte čiernym korením. Podávajte s
hovädzím mäsom alebo párkom.
