PESTO DE CILANTRO
2 h hojas de cilantro 60g de piñones
2 c de ajo 125ml aceite de oliva
60g queso Parmesano rallado
Procese el cilantro, el ajo, los piñones y la mitad del aceite hasta obtener una
consistencia suave. Póngalo en un bol mayor. Mezcle el queso Parmesano. Añada
aceite para modificar la consistencia: Para mojar: espesa Para cobertura: media Para
salsa para pasta: clara
SALSA AGRIDULCE
15ml de salsa de soja 2 chalotes
1 pedazo pequeño de jengibre, pelado 5ml de mostaza
10ml de vinagre de vino blanco 1 c de ajo
5ml de puré de tomate
Procese todos los ingredientes hasta obtener una consistencia homogénea. Servir
con pollo o pescado, o como salsa.
SALSA DE ACEITUNAS NEGRAS Y ANCHOAS
125g aceitunas negras deshuesadas 30g de filetes de anchoas, sin aceite
25g de alcaparras, sin líquido 75ml aceite de oliva
15ml de brandy (opcional) pimienta negra
Reserve la mitad del aceite. Procese todo lo demás. Añada aceite para modificar la
consistencia: Para tapenade: espesa Para salsa para pasta: clara Sazone con
pimienta negra fresca molida.
SALSA DE TOMATE CON VERDURAS
¼ chile rojo (sin semillas) ½ cebolla
½ pimiento rojo 400g tomates (en conserva)
½ pimiento verde 1 c de ajo
60ml de puré de tomate 1 h perejil
8ml aceite de oliva 2.5g sal
Coloque las cuchillas. Trocee la cebolla, los pimientos rojos y verdes, el ajo, el chile y
el perejil en trozos grandes. Añada los tomates, aceite de oliva, el tomate triturado y
la sal. Amase durante 5 segundos.
SALSA DE RÁBANO PICANTE Y MANZANA
1 manzana, pelada y rallada 125ml de nata doble
45g de pasta de rábano 5g de paprika
Monte la nata. Póngalo en un bol mayor. Incorpore a los demás ingredientes.
Sazone con pimienta negra fresca molida. Servir con carne de ternera o salchichas.
