QUELQUES RECETTES
Mayonnaise végétale
Ingrédients :
Soja Sun Cuisine : 60 g
moutarde à l'ancienne : 20 g
huile d'olive vierge : 1 c. à soupe
sel, poivre du moulin
Préparation :
Placez Soja Sun Cuisine et un bol au freezer 10 à 15 min.
Dans le bol refroidi, versez Soja Sun et la moutarde.
Salez, poivrez.
Versez l’huile en filet.
Montez la sauce avec un fouet jusqu’à obtention d’une consistance légère et ferme.
Pour garder cette texture ferme, la mayonnaise doit rester bien froide jusqu’au moment de servir.
Mayonnaise
Ingrédients :
2 jaunes d’œuf
2 pincées de sel
1 pincée de poivre
1 CC de moutarde
35 cl d’huile
1 CS de vinaigre de vin blanc ou de jus de citron
Recette :
Mettez 2 jaunes d’œufs dans un bol et battez-les 30 secondes avec 2 pincées de sel, 1 pincée de poivre et
1 CC de moutarde. Ajoutez, d’abord goutte à goutte, puis en mince filet, 35 cl d’huile, tout en fouettant.
Incorporez ensuite 1 CS de vinaigre de vin blanc ou de jus de citron et rectifiez l’assaisonnement.
Conseils :
Si la mayonnaise tourne, prélevez une cuillère à soupe de mayonnaise et mélangez-la avec une cuillère à
soupe d’eau bien chaude. Réincorporez peu à peu dans la sauce, en fouettant, comme on le fait avec
l’huile.
