mleko treba provriti i ohladiti, zatim procediti da se ukloni pena.
Jogurt od punomasnog mleka će imati više gušću teksturu i intenzivniji ukus.
Za spremanje gušćeg jogurta može se dodati 2–3 kašike suvog mleka za 1 l
mleka, a treba temeljno izmešati ovu mešavinu. Mleko mora da ima sobnu
temperaturu ili da bude malo toplo (36–40°С). Ne treba koristiti mleko koje je
tek izvađeno iz frižidera.

Kao kvasac mogu se koristiti:

Nakon spremanja prve partije jogurta, dovoljno sačuvati neku njegovu količinu
za dalje spremanje. Nakon spremanja 5 partija, treba koristiti novi kvasac, jer
tokom vremena on se malo prazni, što dovodi do manje gustine jogurta.
