Izbor mlijeka



Jogurt pripremljen od neobranog mlijeka posjeduje kompaktniju konzistenciju
i bolji okus.
Za pripremu gušćeg jogurta na 1 litar mlijeka možete dodati 2-3 žlice za juhu
mlijeka u prahu, uz dobro miješanje dobivene smjese. Mlijeko mora imati
sobnu temperaturu ili može biti malo toplije (36–40°С). Ne treba koristiti
mlijeko koje ste netom izvadili iz hladnjaka.

Poslije pripreme prve partije jogurta dostatno je pohraniti manju količinu is-
toga za naredne pripreme jogurta. Poslije pripreme 5 partija treba koristiti novo
sirište – jer je isto tijekom vremena iscrpljuje, što dovodi do pripreme jogurta
rastresitije konzistencije.

Povećana kiselost nekoga voća uništava fermente i ne dozvoljava pripremu
jogurta visoke kvalitete. U takvom slučaju treba dodavati svježe voće u jogurt
neposredno prije njegove pripreme.

Rok upotrebe prirodnog jogurta kod pohrane u hladnjaku iznosi najviše 8 dana.
Shodno tomu, rok upotrebe na poklopcu treba navesti polazeći od izračuna D
+ 8 dana, gdje je D – datum pripreme jogurta. Zatvorite staklenke poklopcima
i odložite ih u hladnjaka da odstoje najmanje 6 sati. Hlađenje jogurta tijekom
jednoga dana omogućava dobijanje gušće konzistencije. Upamtite da se aparat
za pripremu jogurta ne smije stavljati u hladnjak!
