10. POMMES FRITES
Verwenden Sie am besten dicke, nicht zu neue Kartoffeln. Schneiden Sie diese in
dünne Streifen. Spülen Sie die Kartoffelstreifen unter fließendem Wasser ab und
trocknen Sie diese ab.
Frittieren Sie die Pommes frites in zwei Portionen:
• Erste Portion: 150-160°C: 5 bis 10 Minuten (je nach Menge)
• Zweite Portion: bis 175 °C: 2 bis 4 Minuten
• Vor dem Servieren gut abtropfen lassen.
11. FONDUE
Für Fondue verwenden Sie am besten neues Öl. Unterschiedliche Frittierölsorten
nicht mischen.
Niemals Wasser ins Öl gießen. Keine Kräuter ins Öl geben und keine gewürzten Öle
verwenden. Achten Sie darauf, dass das Frittiergut trocken ist, bevor Sie anfangen.
• Nehmen Sie den Deckel vom Gerät ab (Abb.).
• Füllen Sie den Ölbehälter so, dass der Ölstand zwischen
der Minimum- und Maximum-Markierung liegt.
• Legen Sie den Fonduering auf den Ölbehälter und
setzen Sie die Gabeln ein.
Achten Sie darauf, den Ölbehälter mit den Metallgabeln nicht zu beschädigen.
Die Temperatur und Frittierzeit hängt stark von der Art des Fondues ab: Fleisch,
Käse oder chinesisches Fondue erfordern unterschiedliche Frittierzeiten.
