Sel
En 2003 il y avait plus de
14 millions de tonnes de
sel produites en Allema-
gne, ce qui fait de ce pays
le premier fabricant de sel
en Europe.
Le sel, composé de 98 %
de chlorure de sodium pro-
vient surtout de la mer et
des mines de sel.
Le sel marin contient en-
core des minéraux et oligo-
éléments. Il peut avoir une
teinte rosâtre, due aux al-
gues. Les températures
élevées risquent de dé-
truire ces substances ; de
ce fait, le se ne convient
pas pour cuisiner. Utilisez-
le donc plutôt pour saler
les mets déjà préparés.
Poivre
Le poivre, l’épice le plus
fréquemment utilisé au
monde est, entre autres,
produit en Inde, Malaisie,
Sri Lanka, Brésil et China.
Le poivre noir est plus fort
que le poivre blanc.
Le poivre n’est pas seule-
ment connu pour son goût
‚poivré’, il est également
utilisé depuis l’Antiquité
comme médicament. Le
poivre est un digestif, sti-
mule l’appétit, élimine les
microbes et réduit la fièvre.
En règle générale, on utili-
sera le poivre blanc avec
des aliments clairs et le
poivre noir avec des ali-
ments sombres.
