PUDIM DE PERAS ASSADAS
Ingredientes para 4 pessoas: 500 gr de peras para assar (que fiquem vermelhas depois de cozer), 2 dl de
vinho tinto, 2 paus de canela, 1 folha de louro, 3 bagas de zimbro, 10 gr de gelatina, 2 dl de natas e 1 dl
de chantilly.
Modo de preparação:
1. Descasque as peras e retire os caroços. Ponha-as com o vinho tinto e água (até ficarem cobertas).
Junte todas as especiarias. Coza bem as peras.
2. Retire as peras do líquido onde cozeram. Guarde 10 peras e faça um puré das peras restantes no
liquidificador. Acrescente eventualmente um pouco do líquido, mas guarde o resto! Derreta a gelatina
em água no micro-ondas. Misture com uma espátula a gelatina derretida com o puré de peras ainda
quente.
3. Bata bem as natas. Corte 5 peras em cubos. Misture o puré de peras e os cubos de peras com o
chantilly. Coloque os palitos de la Reine à volta da forma. Deite a mistura dentro da forma e deixe
solidificar durante cerca de 3 horas.
4. Deite o pudim num prato. Corte as restantes peras em gomos e coloque-as à volta do pudim.
Enfeite com o chantilly.
