For at formindske dannelse af akrylamid bør produkter der indeholder meget stivelse, især kartoffel- og
kornprodukter, ikke frituresteges ved temperaturer højere end 175 °C.
SIKKERHEDSFILTER FOR FRITUREGRYDER
Frituregryden har en ’kold zone’ i bunden af apparatet. Den ’kolde zone’ er
et område, hvor større fødepartikler synker ned, og den lavere temperatur
forhindrer, at de bliver brændt af olien eller af det flydende fedt. Frituregryder
med en ’kold zone’ har mange fordele, men kræver også særlig opmærksomhed.
Frituregryder med en ’kold zone’ er følsomme overfor vand, eftersom
varmeelementet er neddykket i olie eller flydende fedt. Vand kan komme i
kontakt med olien eller det flydende fedt af forskellige grunde:
- De fleste fødemidler, især kartofler, indeholder naturligvis vand.
- Kondensation af varm damp.
- Ispartikler i frosne madvarer.
- Fødemidler som er vaskede, men ikke grundigt tørrede før
anvendelse.
- Den flytbare gryde er ikke tørret grundigt efter rengøring.
- Der anvendes den forkerte type olie eller flydende fedt.
Håndbogen indeholder anvisninger på hvordan det forhindres,
at vand kommer i kontakt med olien eller det flydende fedt.
Hvis vand kommer i kontakt med olien eller det flydende
fedt, kan dette begynde at sprøjte, boble eller flyde over i
overvældende grad. For at gøre frituregryderne så effektive
som muligt, har Princess udviklet et specielt sikkerhedsfilter,
som yderligere nedsætter temperaturen i den ’kolde zone’ og
fordeler vandpartiklerne mere effektivt. Sikkerhedsfiltret forhindrer olien eller det flydende fedt i
at sprøjte, boble eller flyde over.
