1 Utilice la licuadora para obtener la pulpa de la piña. Bata la mantequilla con una amasadora
hasta que quede cremosa. Añada poco a poco el azúcar, las yemas de huevo y la leche
condensada. Siga batiendo hasta que la mezcla quede esponjosa y añada la pulpa de la piña.
2 Unte ligeramente con mantequilla un molde desmontable, y cubra el fondo y los lados del
molde con bizcochos de soletilla ligeramente humedecidos con el almíbar de la piña en
conserva. Añada luego una capa de masa y otra capa de bizcochos de soletilla, y así
sucesivamente. Termine con una capa de masa. Enfríe la tarta en el frigoríco durante tres
horas, y luego sáquela del molde.
3 Hierva azúcar y agua para hacer caramelo. Decore la tarta con rodajas de piña, cerezas al
marrasquino y hebras de caramelo.
Tarta de zanahoria, manzana y piña
200 g de zanahoria
200 g de piña
200 g de manzana
1 taza de coco (rallado)
3 tazas de harina
1 cucharadita de bicarbonato sódico
1 cucharadita de canela
1 taza de azúcar
1 taza de miel
4 huevos
1 taza de aceite
1 paquete de azúcar de vainilla
1 taza de frutos secos picados
1 Licúe los trozos de zanahoria, piña y manzana. Utilice la pulpa que ha quedado en el depósito
de pulpa.
2 Mezcle la pulpa de zanahoria, piña y manzana. Añada la miel, el azúcar, los huevos, el aceite y el
azúcar de vainilla, mezclando bien todo. Añada los ingredientes secos y mueva hasta que se
mezclen.
3 Remueva el coco y los frutos secos. Vierta la mezcla en un molde para horno previamente
untado con aceite o mantequilla. Hornéelo a 160 °C durante aproximadamente 45-
55 minutos.
Nota: Esta mezcla también sirve para hacer magdalenas. Llene los moldes hasta 3/4 de su capacidad y
hornéelos durante 40 minutos.
