Schuimgebak Met Custardsaus
Bereidingstijd: 8 tot 10 min. - 4-5 pers. - MAGNETRON
Benodigdheden: 1 kom van 1 liter + 1 kleine kom
eiwitschuim:
wit van 4 eieren met 40 g suiker
custardsaus: 4 eidooiers
85 g griessuiker

liter melk
1 vanillestokje;
karamel:
50 g suiker + 1 sl water
Kook de karamel 1 tot 2 min. in de kom op MAX en houd het aandachtig in de gaten. Stop
het koken van de karamel met 2 lepels zeer warm water.
Giet de melk in de grote kom. Voeg het in tweeën gebroken vanillestokje toe. Verwarm
deze 2 tot 3 min. op MAX (totdat de melk begint te razen). Klop ondertussen de eidooiers
en de griessuiker op tot het mengsel wit begint te kleuren. Klop de kokende melk er
doorheen en verwarm opnieuw 2 min. 30 s. tot 3 min. op MAX. Om de 30 seconden
doorkloppen. Stop met koken zodra de room dik wordt. Verwijder de vanillestokjes en rasp
enkele korrels in de room. Laat het geheel afkoelen. Klop het eiwitschuim met een snuifje
zout en doe er een beetje suiker bij. Maar er 8 tot 10 balletjes van, leg ze op de platte
ovenschaal en verwarm ze 1 min. 30 s. tot 2 min. op MAX en houd het aandachtig in de
gaten. Laat de schuimballetjes afkoelen en overgiet ze met de karamel.
