Auf der Kochstelle das Fleisch sehr heiß und
ausreichend lange von allen Seiten, auch an den
Enden, scharf anbraten. Sofort auf das vorgewärmte
Geschirr geben. Das Geschirr mit dem Fleisch wieder in
den Garraum geben und sanftgaren.
Empfohlene Einstellwerte
Die Sanftgartemperatur und Gardauer sind von der
Größe, Dicke und Qualität des Fleisches abhängig.

Entenbrust sanftgaren. Legen Sie die Entenbrust kalt in die Pfanne und braten Sie die Hautseite zuerst an. Nach dem Sanftgaren für 3
bis 5 Minuten knusprig grillen.
Das sanftgegarte Fleisch ist nicht so
heiß wie normal gebratenes Fleisch.
Damit das gebratene Fleisch nicht so schnell abkühlt, wärmen sie die Teller an und servieren Sie die Soßen
sehr heiß.
