200gplainflour
3eggs
250mlof milk
65gofmelted butter
35gofcrème fraîche
Juiceof1/2lemon
10goffresh yeast
Lukewarmwater
Dissolve the yeast in a little lukewarm
water.
Put the flour, the dissolved yeast, a few
pinchesofsaltandthewarmmilkintothe
multifunction bowl (E) with the kneading
blade(E5).
Mix together on TURBO speed until the
dough is smooth. If the dough does not
becomesmooth,add alittlewater.
Removethedoughfromthebowl(E)(be
carefuloftheblade), sprinklealittleflour
overthetop andleaveto restfor2 hours
inacool place.
In the multifunction bowl (E) with the
emulsifying disc (E10), whisk the three
egg whites until firm on TURBO speed,
puttoone side.
Oncethedoughhasrested,putitbackin
the multifunction bowl (E) with the
kneading blade (E5), then add the three
eggyolks,50 gcooledmeltedbutter and
thecrèmefraîche alongwithafewdrops
oflemonjuice, mixonTURBO speed.
Checktheconsistencyofthemixtureand
just before using it, fold in three egg
whites which have been whisked until
firm,atspeed 1.
Oilasmallfryingpanandheat.Thenpour
insomeof thethickmixture.
Leave theblinistocook for 2 minuteson
each side, brushing them with a little
meltedbutter.Servehotwiththefollowing
accompaniment.

4to6slices ofstalebread.
Soakthebread,crustsremoved,inwater
andthendrain well.
Inthebowlfittedwiththechoppingblade
(E4) and at TURBO speed, chop the
meatforaround 30seconds.
Using the kneading blade (E5), mix the
breadcrumbs and the meat in the
multifunctionbowl(E) onTURBO speed.
Remove the mixture from the bowl (E),
form little balls about the size of 2 or 3
walnuts and then flatten them with the
palmofthehand.
Place the Köfte in a non-stick frying pan
andleavethemto cookuntilgolden.
Servewithmashed potatoorrice.

Pizzadough:
150gofflour,1/2packetofbaker'syeast,
salt,9ml lukewarmwater,2tablespoons
ofoliveoil.
-In the bowl fitted with the knife, fold in
theflour,baker’syeastandthe salt.
-Turn the appliance at speed 6 for
10 seconds then pour in the lukewarm
water as well as the olive oil through
untilaball ofdoughbegins to form.
-Leavetorest foronehour.
