1) Verwenden Sie das Universalblech.
2) Heizen Sie den Garraum vor.

Wählen Sie während der Aufheizphase Erweiterte Einstellungen öffnenSchnellaufhei-
zenaus.
4) Bereiten Sie das Gericht im Garverfahren Niedertemperaturgaren zu (siehe Kapitel „Nie-
dertemperaturgaren – Niedertemperaturgaren mit manueller Temperatureinstellung“):
Garraum samt Rost, Universalblech und aufgelegtem Grill- & Bratblech auf 120°C
vorheizen.
Fleisch anbraten, auf das vorgeheizte Grill- & Bratblech in den vorgeheizten Backofen
geben.
Temperatur für den Garvorgang auf 100°C reduzieren.
5) Je nach gewünschtem Gargrad: rare/englisch: 40–45°C, medium: 50–60°C, well done/
durch: 60–75°C
6) Garen Sie zuerst mit Deckel. Entfernen Sie den Deckel nach der Hälfte der Garzeit und
gießen Sie ca. 0,5l Flüssigkeit an.
7) Gießen Sie ca. 0,25l Flüssigkeit an. Wenden Sie das Gargut nach der Hälfte der Garzeit.
8) Öffnen Sie die Feuchteregulierung, solange der Garraum kalt ist.
Stellen Sie Betriebsart und Temperatur ein und wählen Sie zusätzlich Erweiterte Einstel-
lungen öffnenCrisp functionein.
9) Wenn Sie das Speisenthermometer verwenden, geben Sie die dem Gargut entsprechen-
de Kerntemperatur ein.
