Zubereitungszeit: 130–140 Minuten
Zutaten für ca. 6 Portionen
1000 g Schweinebraten (Schinken-
oder Nussstück)
Salz, Pfeffer, Paprika
1 TL Senf
30 g Butter oder Margarine
100 ml Sahne oder Crème fraîche
Speisestärke
Zubereitung
1. Fleisch mit Salz, Pfeffer und Paprika
würzen, mit Senf bestreichen. Mit Fett-
flöckchen belegen, in einen Bräter le-
gen und etwa 30 Minuten zugedeckt
garen.
2. Sahne, Crème fraîche oder etwas
Wasser zugeben und offen zu Ende ga-
ren.
3. Bratenfond mit Wasser auffüllen, mit
angerührter Speisestärke leicht binden
und zum in Scheiben geschnittenen
Fleisch servieren.
