Filet de porc farci
Temps de préparation : 65 à 75 minutes

Ingrédients
4 filets de porc (300 g chacun)
Sel
Poivre
20 feuilles de basilic
250 g de pesto rouge
30 g de parmesan fraîchement râpé
12 tranches de jambon de Parme
40 g de beurre
250 ml de crème liquide
250 ml de bouillon de viande
Préparation
Ouvrir les filets de porc en les incisant
sans les couper complètement. Saler et
poivrer des deux côtés, disposer les
feuilles de basilic dans l'ouverture.
Répartir le pesto rouge et parsemer de
parmesan. Refermer les filets et les en-
velopper de jambon de parme. Dépo-
ser les filets dans un plat allant au four,
parsemer avec les miettes de beurre et
mettre au four.
Au bout de 15 minutes de cuisson, ar

roser avec la crème et le bouillon, ré
-
duire la température à 140°C et activer
la dernière diffusion de vapeur. Lier la
sauce avec un peu de fécule déjà pré
-
parée.

Vous pouvez préparer vous-même le
pesto rouge.
Prendre 200 g de tomates confites et
émincer finement une gousse d'ail.
Mixer avec 50ml d'huile d'olive, 1 cuil. à
café de sucre et 2 cuil. à soupe de cha

pelure. Ajouter une pointe d'origan et
de sambal oelek.
