Filet de poisson à la viennoise
Temps de préparation : 65 à 75 minutes
4 portions
Ingrédients
600 g de filet de saumon
Jus d’1 citron
125 g de crème fraîche
50 g de cornichons
10 g de câpres
30 g de lard entrelardé
1 cuil. à soupe de moutarde
1 cuil. à café de parmesan
Préparation
Laver les filets, les sécher et les arroser
de jus de citron. Déposer un filet dans
un plat allant au four beurré (20x20cm)
et le napper de la moitié de la crème li-
quide/fraîche.
Rincer les cornichons et les câpres à
l'eau. Couper les cornichons et le lard
en petits dés et les mélanger aux câ-
pres hachées.
Répartir un tiers du mélange aux corni
-
chons sur le filet de poisson. Poser un
deuxième filet de poisson. Le badi
-
geonner de moutarde et répartir un
autre tiers du mélange aux cornichons
par-dessus.
Déposer le dernier filet de poisson
par-dessus. Badigeonner avec le reste
de la crème fraîche et répartir le reste
du mélange aux cornichons par-des
-
sus. Parsemer de parmesan et cuire.
