Truite farcie
Temps de préparation : 70 à 80 minutes
4 portions
Ingrédients
2 truites saumonées (de 600–700 g)
Jus d’1 citron
Sel
2 échalotes
2 gousses d'ail
50 g de petites câpres
1 jaune d'œuf
2 cuil. à soupe d'huile d'olive
2 tranches de pain de mie
Piment en poudre
Poivre fraîchement moulu
Préparation
Laver et sécher les truites, les citronner
puis les saler à l'intérieur et à l'exté-
rieur.
Eplucher les échalotes et l'ail et les
couper en petits dés. Couper égale-
ment le pain de mie en petits dés. Mé-
langer les câpres, le jaune d'œuf, les
échalotes, l'ail, l'huile et le pain, assai
-
sonner avec le sel, le poivre et la
poudre chili.
Garnir les truites de ce mélange et fer
-
mer l'ouverture avec des petites piques
en bois.
Poser les truites sur le plat universel et
les cuire au four.
