Käse-Sesam-Brötchen
10 Brötchen / pro Brötchen 1316 kJ / 315 kcal, E 12 g, F 13 g, KH 37 g
Zubereitungszeit: 85–110 Minuten
Zutaten:
500 g Mehl
40 g Parmesan, feingerieben
1 gehäufter TL Salz
1 Prise Zucker
2 Eier
75 g flüssige Butter
1 Würfel Hefe (42 g)
150 ml lauwarme Milch
6 EL Sesam
Zum Bestreichen:
1Ei
Zum Bestreuen:
120 g Cheddar-, Chester- oder Gouda-
käse, gehobelt
Für die Dampfstöße: ca. 100 ml Wasser
Zubereitung:
1. Mehl, Parmesan, Salz, Zucker, Eier
und flüssige Butter in eine Schüssel ge

ben. Hefe unter Rühren in der Milch lö
-
sen und mit den restlichen Zutaten
3–4 Minuten zu einem glatten Teig ver
-
kneten. Im Backofen zugedeckt bei
35 °C Ober-Unterhitze 20–30 Minuten
gehen lassen.
2. Aus dem Teig 10 gleichgroße Kugeln
formen und auf ein mit Backpapier be
-
legtes Backblech legen. Bei 35 °C
Ober-Unterhitze 10–15 Minuten gehen
lassen.
3. Die Brötchen mit der Unterseite in
Sesam tauchen. Die Oberseite mit dem
verquirlten Ei bestreichen, gut mit Käse
bestreuen oder in Käse tauchen und
goldbraun backen.

Temperatur: 150–170 °C
Einschubebene: 2. v. unten
Backzeit: 30–40 Minuten
