Onion flat bread
Dough ingredients
1 cube of fresh yeast (42 g)
200 ml lukewarm water
375 g strong white flour
1 tsp salt
2 tbsp oil
Topping ingredients
2 small red onions
100 g strong cheese
Thyme
For drizzling
2 tbsp oil
Method
Dissolve the yeast in lukewarm milk.
Then add to the flour, salt and oil and
knead for 3–4 minutes until you get a
smooth dough. Cover the dough and
place in the oven to prove for about
45 minutes using Conventional heat at
35 °C.
Punch the dough down and roll out into
the shape of a flat bread (C approx.
30 cm). Place on a baking tray, cover
and leave to prove at room temperature
for another 10 minutes.
Peel and finely slice the onions. Grate
the cheese.
Scatter the onions on the flat bread,
spread with the cheese and thyme,
drizzle with oil around the edges and
bake until golden.
