Spanish garlic rabbit
Serves 4
Ingredients
1 rabbit
Salt
Pepper
4 celery sticks
2 onions
2 tomatoes
4 cloves of garlic
5 tbsp olive oil
125 ml white wine
750 ml chicken stock
3 sprigs of thyme
4 bay leaves
100 g black olives, sliced
Method
Cut the rabbit into 6 pieces and season
with salt and pepper. Dice the celery
onions and tomatoes.
Place the meat in a gourmet oven dish
and sear in olive oil on the hob. Add the
tomatoes, celery, onions and garlic.
Deglaze with the white wine and add
the chicken stock, thyme, bay leaves
and sliced olives. Place in the oven and
cook.
Remove the meat, sieve the sauce in a
pan and simmer. Thicken with a little
cornflour mixed in water if necessary.
