Kalfsfilet (gebraden)

Voor de kalfsfilet
2eetlepels olie
1theelepel zout

1kg kalfsfilet, panklaar

30g morieljes, gedroogd
300ml water | kokend
1ui
30g boter
150g room
30ml witte wijn
3eetlepels water | koud
1eetlepel maïzena

Bereiding
Start het automatische programma of
verwarm de oven voor.
Verhit de olie voor het aanbraden in een
pan en braad daarin de kalfsfilet gedu-
rende 1minuut op hoog vuur aan alle
kanten aan.
Roer de olie, het zout en de peper door
elkaar en bestrijk de kalfsfilet ermee.
Leg de kalfsfilet op de universele bak-
plaat en steek de draadloze spijzenther-
mometer erin. Schuif de universele bak-
plaat in de oven en laat de kalfsfilet
gaar worden.
Giet voor de saus het water over de
morieljes en laat ze 15minuten weken.
Snipper de ui. Giet de morieljes in een
zeef af, maar bewaar het water. Druk de
morieljes uit en snijd ze in dobbelsteen-
tjes.
Fruit de uien 5minuten in de boter.
Voeg de morieljes toe en laat nog 5mi-
nuten zachtjes bakken.
Voeg het water van de morieljes, de
room en de wijn toe en breng het aan
de kook. Vermeng de maïzena met wa-
ter en bind de saus daarmee. Breng het
opnieuw kort aan de kook. Breng het
geheel op smaak met zout, peper en
suiker.
