200g boter
300g tarwebloem, type405
100g poedersuiker
8g vanillesuiker
2eieren, grootteM | alleen het eigeel
100g amandelen, gepeld en gemalen
½ citroen, onbehandeld | alleen de schil
| geraspt
Voor de vulling
200g rodebessengelei
Accessoires
Vershoudfolie
Bakplaat of universele bakplaat
Uitsteekvormpjes, rond (in 2groottes)
Bereiding
Snijd de boter in blokjes en kneed deze
met meel, poedersuiker, vanillesuiker,
eidooiers, amandelen en citroenschil
totdat er een gladde deegmassa ont-
staat. Wikkel het deeg in vershoudfolie
en zet het 30minuten op een koele
plaats.
Rol het deeg daarna uit tot een dikte
van ca.2mm en steek er rondjes uit.
Steek bij de helft van de koekjes ook in
het midden een klein rondje uit het
deeg (steek bij grotere deegschijven
3rondjes uit het deeg).
Leg de koekjes op de bakplaat of de
universele bakplaat, schuif ze in de
oven en laat ze lichtgeel bakken.
Na afloop van de bereidingstijd kort la-
ten afkoelen. Bestrijk de lauwe koekjes
zonder gaatjes met de iets verwarmde
rodebessengelei en leg de koekjes met
de gaatjes erop. Bestrooi ze met poe-
dersuiker.
