12coquilles Saint-Jacques
1noix de beurre doux
Sel

250ml de lait
15g de beurre doux
20g de farine

Noix de muscade (râpée ou en poudre)
Piment d’Espelette

30g de chapelure

Préparation
Pour la sauce béchamel: faire fondre le
beurre dans une casserole sur une zone
de cuisson avec un réglage faible puis
ajouter la farine en fouettant, cuire pen-
dant 1 minute sans colorer.
Ajouter le lait, fouetter jusqu'à obtenir
une consistance crémeuse. Assaison-
ner avec le sel, le poivre, la noix de
muscade et le piment d’Espelette, ré-
server à température ambiante.
Dans une poêle, faire doucement
chauffer une noix de beurre. Lorsque le
beurre devient mousseux, faire colorer
les noix de Saint-Jacques 1minute de
chaque côté.
Déposer 3 noix par coquille, placer les
coquilles sur la plaque du four et verser
la béchamel sur les noix, parsemer de
persil frais et de chapelure.
Démarrer le programme automatique et
mettre à cuire dans le four préchauffé.
