Gegratineerd witloof
Totale bereidingstijd: 50–60 minuten

Ingrediënten
8 stuks witloof
8 plakken gekookte ham (3–4 mm dik)
50 g boter
5 g nootmuskaat
5 g suiker
zout
peper
Ingrediënten kaassaus
750 ml magere melk
250 g kaas, geraspt
30 g boter
40 g bloem
1 eidooier
1 eetlepel citroensap
zout
peper

Bereiding
Snij ca. 5 mm van de witloofstronk af
en verwijder het harde, bittere gedeelte.
Smelt boter in de pan, braad het witloof
daarin goudbruin, verlaag de tempera‐
tuur en laat dan nog 25 minuten op lage
temperatuur nadampen. Voeg suiker,
zout en peper toe.
Wikkel de stronken witloof in gekookte
ham en leg ze naast elkaar in een
schaal.
Smelt boter voor de kaassaus in een
pan, roer er bloem door en laat de boter
licht aanbruinen. Voeg - onder krachtig
roeren - nu melk toe, brengt het geheel
aan de kook en roer er de helft van de
kaas, het eigeel, nootmuskaat en ci‐
troensap doorheen.
Giet de kaassaus over de witloof. Be‐
strooi het geheel met de resterende
kaas en bak het goudbruin.
