Gevulde aubergines
Totale bereidingstijd: 50–60 minuten

3–4 aubergines
Olie

2 uien, in blokjes
20 g boter of olie
300 g rundergehakt
250 g champignons, in schijfjes
200 g tomatenpuree
250 ml room
Zout
Peper
150 g Goudse kaas, geraspt

Ovenschaal
Bereiding
Snijd de aubergines in lengterichting in
1 cm dikk
e schijfjes. Bestrooi de schijf‐
jes met zout en laat ze ca. 10 minuten
staan. Dep de schijfjes met keukenpa‐
pier af en bak ze kort aan in hete olie.
Leg de schijfjes naast elkaar in een
ovenschaal.
Fruit de uien in vet. Bak het gehakt hier‐
in bruin. V
oeg de champignonschijfjes
toe. Voeg ook de tomatenpuree, de
room en de kruiden toe.
Verdeel het mengsel over de aubergine‐
schij
fjes. Bestrooi het geheel met kaas
en gratineer het.
