Kalfsvlees met room
Totale bereidingstijd: 130–140 minuten
voor 6 porties
Ingrediënten
1000 g kalfsbraadvlees (bout of frican‐
deau)
1 afgestreken theelepel zout
¹/₂ theelepel witte peper
2 afgestreken theelepels paprika, edel‐
zoet
1 theelepel boter
2 uien
2 wortels
2 tomaten
2 kalfsbotten
750 ml bouillon of fond
250 ml room

Bereiding
Bestrooi het vlees met zout, peper en
paprika. Bestrijk het vlees met bot
er en
leg het in de gourmet-braadpan. Snijd
de geschilde wortels, uien en tomaten
in grove stukken en doe deze met de
kalfsbotten bij het vlees.
Voeg na 30 minuten ca. een kwart liter
bouill
on of fond toe. Herhaal dit om de
30 minuten. Voeg tenslotte de room
toe.
Voeg aan het braadvocht water toe.
Bind het voch
t met voorbereide maïze‐
na.
Snijd het vlees in plakken en dien het
met de fond op.
